Since it isn't 1398 degrees outside I thought I might bake some cookies.

Seriously, since it's back in the 90s now I feel like fall just MUST be on it's way. The pool has cooled down and doesn't feel like a bath tub any longer. It's almost too chilly to even get in now.
I follow another blog that I just love and the other day she posted the recipe for what she described as the 'perfect Gingersnap cookies'. I have never baked Gingersnaps but I just love them and so does my husband. Well, they turned out great and they took only about 3 minutes to make.

Gingersnaps
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon ginger
3/4 cup butter-flavor shortening
1 cup sugar
1/4 cup molasses
1 egg
sugar to roll cookies in

Sift the flour, baking soda, salt, cinnamon, cloves, and ginger together. Cream the shortening and 1 cup of sugar in a mixing bowl. Add the molasses and egg and beat well. Add the flour mixture and mix well. Roll into small balls, adding additional flour if necessary to make the dough easy to handle. Dip in sugar and place 2 inches apart on lightly greased cookie sheets. Bake at 375 for 10 to 12 minutes or until golden brown. Cool on wire racks.

I use a convection oven and my cookies were perfect in 6 minutes.


It's so easy. And they are delicious!

See this food processor? I found it in my cabinet yesterday. Yep, seriously, I FOUND IT. I have no recollection of even buying it. It was in the box and brand new. I am so excited because I am using it for another recipe today. It will be a small miracle if I can figure out how to use it AND get the recipe correct. I'll be back shortly with the results. Fingers crossed.
